Tony's ultimate roast potatoes

12 Keogh’s Rooster Potatoes (cut in half )
2-3 sprigs of thyme
Sunflower or olive oil
Salt & pepper
Pre-heat your oven to 220°C.
Wash, peel, rewash and dry the potatoes.
Cut into roughly 3cm irregular cubes.
Par-boil for 5 minutes.
Place 2 tablespoons of olive oil in a roasting tin,add the potatoes and baste well.
Add the fresh thyme and season with salt & pepper.
Cook for 45 mins until golden brown.
