Tuna loin fillets with a sesame-dressed salad and wilted pok choi
Quick and healthy meal.

For the sesame dressing:
300ml sesame oil
75ml rice wine vinegar
25g sesame seeds, toasted
Juice and finely grated zest of 1 lime
Salt and freshly ground black pepper
For the salad:
1 x 200g punnet of bean sprouts
2 medium red peppers, finely sliced
2 medium carrots, peeled and very finely sliced
200g rice noodles
5 spring onions, finely chopped
1 small bunch of fresh coriander, finely chopped
For the tuna loin fillets:
4 x 200g tuna loin fillets
Salt and freshly ground black pepper
Extra virgin olive oil
For the garnish:
1 bunch of baby pak choi
2 lemons, cut in half

For the sesame dressing, whisk all of the ingredients together. Check the seasoning and add as necessary.

Pour the dressing into a screw-top jar and shake well before serving.

For the salad - cook the noodles for 1 minute in boiling water and drain them in a colendar or sieve.

Then mix all of the salad ingredients together in a large bowl.

For the tuna loin fillets, preheat a griddle pan, sauté pan or barbecue to a high heat.

Season the tuna loin fillets with the salt and black pepper and smear each one with a little olive oil to prevent them sticking.

Cook the fish to your liking.

If you prefer your tuna rare, we suggest you cook it for approximately 2-3 minutes on each side, depending on the thickness of the fillets.

Increase the cooking time on each side by a minute or so for a more well-done finish.

For the garnish, wilt the pok choi by lightly grilling it on both sides for about 25 seconds.

You could also place the lemon halves cut side down on a heated griddle for a chargrilled effect.

To serve, dress the salad with the sesame dressing, divide it between the 4 serving plates and place a tuna loin fillet on top.

Garnish each plate with a little wilted pok choi and half a lemon.

Serve immediately.
