Tuna Niçoise with thyme semolina

Tuna Niçoise with thyme semolina

100g ratatouille (leftover or from family dinner)
30g tinned tuna
4 tbsp water
½ tsp dried thyme
Pinch of salt
50g fine semolina

Heat the ratatouille in a saucepan over a medium heat.

Drain the tuna and fluff it with a fork.

Mix the tuna into the ratatouille, reduce the heat and cook for 5 minutes.

Meanwhile, bring the water to the boil. Add the thyme, salt and semolina. Cover and leave to sit for five minutes (giving the semolina time to expand).

Fluff the semolina with a fork and serve with the tuna Nicoise.
