Tuna & sweetcorn pasta bake
Pasta Bakes are a simple dish that children always enjoy and that are quick and easy to make

600g tube pasta (e.g. rigatoni, penne or macaroni)
50g butter
50g plain flour
600ml milk
250g strong cheddar, grated
2 x 160g cans of tuna (preferably in spring water or brine – not oil)
330g can of sweetcorn - drained
large handful chopped of flat leaf parsley

Preheat the oven to 170°C/325°F/Gas 3. Lay an oven proof baking dish out.

Boil the pasta for 2 minutes less time than the cooking instructions on the pack.

To make the sauce:

Melt the butter in a saucepan – don’t let it burn or bubble. Add in the flour and stir well. You can remove from the heat for a moment, if it is getting too hot and looks like it is burning.

Cook for 1 minute and then gradually add the milk a little at a time. Use a whisk if you have one. This will make a thick white sauce. Remove from the heat and stir in most of the cheese retaining a handful for the top of the finished dish.

Drain the tuna and break into lumps.

Drain the pasta and mix in the white sauce, tuna, sweetcorn and parsley. Season to taste with salt and pepper.

Empty the saucepan into the baking dish and sprinkle the top with the rest of the grated cheese.

Bake for 15-20 minutes until the cheese on top is golden and starting to brown.
