Turkey meatloaf
Meatloaf doesn't have to just be made with beef. Turkey is a healthier alternative and tastes just as good. 

1 tbsp olive oil

1 onion, minced

2 garlic cloves, minced

6 button mushrooms, finely sliced

100g breadcrumbs

3 tbsp parsley, chopped

1 tbsp soy sauce

1 tsp black pepper

1 large egg, lightly beaten

500g turkey mince

1 squash, quartered

Preheat oven to 180°C /350°F/gas mark 4. Lightly grease a loaf tin with oil and line with parchment paper. 

Heat the oil in a non stick pan over a medium heat. Fry the onion and garlic until soft.

Add the mushrooms and cook for a further 5 minutes.

Combine the breadcrumbs, parsley, soy sauce, pepper and egg together in a medium bowl.

Spoon in your turkey mince and mushroom mix.  Stir together.

Spoon your meat mix into the loaf tin and place in the oven for 40 minutes. About 10 minutes before your meatloaf is ready pop your squash quarters into the oven.

Leave the meat to sit for 5 minutes before serving with the squash.
