Turkey stir fry

This turkey stir fry is a delicious way to use leftover turkey
45ml soy sauce
2 tsp grated fresh ginger
15ml honey
100ml water
20ml sesame oil
1 head broccoli, cut into florets
2 sticks celery, cleaned and sliced
2 medium carrots, peeled and cut into thin disks
100g sliced button mushrooms
1 medium red pepper, seeded and cut into thin red strips
1 yellow courgette, sliced into disks
125g mangetout, ends cut off
100g slivered almonds, toasted
500g cubed cooked turkey
In a small bowl whisk soy sauce, ginger, honey and water until well combined and set aside.
Heat sesame oil in large skillet over medium high heat.
Add broccoli, celery, carrots and mushrooms to skillet and sauté about 5 minutes stirring constantly.
Add red pepper, courgette and mangetout to skillet.
Sauté 5 minutes or until vegetables are softened.
Add turkey and sauté for 3 minutes or until turkey is warmed.
Add reserved sauce and toss to coat cooking an additional 5 minutes.
Add sliced almonds, remove from heat and serve over brown or basmati rice.
