This super quick vegetarian dish is no stress and delicious.
4 tbsp vegetable oil
1 ½ large onions, chopped into chunks
1 tsp Chinese 5-spice powder or ground ginger
600g fresh stir-fry vegetables
4 x 250g ready-cooked basmati rice
3-4 tbsp soy sauce, or more to taste
Heat the wok or a large pan, then pour in the oil and bring it up to a medium to high temperature.
Add the onion and cook, stirring occasionally, until it starts to brown, about 5 minutes.
Sprinkle in the 5-spice powder or ginger and stir it around quickly for about 30 seconds.
Tip in the vegetables and stir them around, keeping the heat quite high, stirring for 4-5 minutes until the vegetables begin to soften.
Cook the rice per the instructions.
Splash in the soy sauce and remove from the heat.
Serve everything mixed well together.
