Vegetarian Singapore vermicelli

Vegetarian Singapore vermicelli
This is a quick satisfying vegetarian meal everyone will love.
 

6 vermicelli nests

2 tbsp vegetable oil

1 red onion, thinly sliced

3 cloves of garlic, finely sliced

1 tsp chopped fresh ginger

½ tsp chopped red chilli

12 button mushrooms, sliced

2 carrots, thinly sliced

1 large yellow, red or orange pepper, thinly sliced

1 tsp mild curry powder

¼ tsp turmeric

½ tsp cumin

2 tsp dark soy sauce

2 eggs, beaten

Cook vermicelli according to the instructions.

In a wok or large frying pan, heat the oil.

Add the onion, garlic, ginger and red chilli.

Fry for a minute, stirring then add the mushrooms, carrots and pepper.

Cook for a few minutes, stirring.

Add the curry powder, turmeric, cumin, 8 tablespoons of water and the soy sauce.

Stir together well to combine then add the cooked vermicelli mix well.

Fry this until it turns quite dry.

Move everything to the side and add in the eggs.

Move the eggs around a little until cooked with a wooden spoon or chop sticks.

Combine the cooked eggs with vermicelli and vegetables then season to taste with some soy sauce and serve.
