Vegetarian stuffed peppers

For a simple and delicious supper, try this black beans protein and vegetable mixture.
6 peppers, tops removed and deseeded
100g prepared pasta sauce
400g black beans, drained and rinsed
200g tinned sweet corn, drained
1 small onion, finely chopped
320g cooked long grain rice
½ tsp smoked paprika
¼ tsp salt
¼ tsp black pepper
100g cheddar cheese, grated
80ml water
In a mixing bowl, combine the pasta sauce, beans, corn, onion, rice, spices, and cheese.
Mix well to combine.
Spoon the mixture into the peppers and pack with the spoon until tight.
Place the peppers into the slow cooker snuggly and pour the water around the pepper bottoms.
Cover and cook on low for 6 hours then remove carefully using spoons or tongs and serve.
