Weetabix slice
Weetabix slice is a great way to give the kids a bit of fibre and extra energy during sports days or in between meals.

70g butter

4 Weetabix, crushed

100g plain flour

45g coconut

100g sugar

1 tbsp cocoa

60ml water

Icing sugar

Preheat the oven to 180°C / 350°F / Gas mark 4.

Line a baking tin with greaseproof paper and set aside.

Melt butter and mix into crushed Weetabix.

Add the flour, coconut, sugar and water and mix well.

Press the mixture into the baking tin and bake for 15 minutes.

Combine the icing sugar with the milk, adding just enough milk to create a thick paste.

Allow the baked Weetabix to cool before cutting into slices then top with the icing.
