Wild Mushroom Soup

Wild Mushroom Soup

1 small onion, chopped

225g assorted wild mushrooms

115g butter

30g all-purpose flour

1 tsp salt

Freshly ground pepper

2 tsp dried thyme

375ml vegetable stock

675ml milk

75ml red wine (optional)

25ml lemon juice

Melt butter in medium stock pot over medium heat.

Sauté onion and mushrooms in the butter until liquid given off has evaporated.

Stir the flour, salt, pepper and thyme into vegetables.

Whisk vegetable stock into mixture and then whisk in milk.

Cook over medium heat until the soup thickens slightly, but do not allow it to boil.

Stir in the wine and the lemon juice.

Remove about half of the soup including the mushrooms and purée until smooth.

Stir puréed soup back into the remaining soup.

Season to taste.
