Baked sweet potatoes with black beans and cheese
For a satisfying supper full of fibre and proteins, this dish is delicious.
 

4 medium sweet potatoes

400g tinned black beans, drained and rinsed

2 medium tomatoes, finely chopped

1 tbsp olive oil

1 tsp ground cumin

1 tsp ground coriander

¾ tsp salt

100g reduced-fat sour cream

Large handful coriander, chopped

75g white cheddar, grated

Prick the sweet potatoes with a fork in several places.

Microwave on high until tender all throughout, about 15 minutes.

Combine the beans, tomatoes, oil, cumin, coriander and salt and cook a small saucepan over medium heat until heated through.

When just cool enough to handle, slash each sweet potato lengthwise, press open to make a well in the centre and spoon the bean mixture inside.

Top each with a dollop of sour cream, cheddar and some coriander before serving.
