Pasta twist lasagne
A great alternative to the usual lasagne dish.

500g beef mince

500g fusilli pasta

50g butter, melted

30g parmesan, grated

3 eggs, lightly beaten

1 tbsp olive oil

1 onion, diced

100g cheese, grated

1 clove garlic, minced

50g tomato paste

240ml stock

100g butter

75g flour

700ml milk

Salt and pepper to taste

Preheat oven to 180°C or gas mark 4

Cook the pasta until it is half cooked and remove the water before adding 50g butter and 30g parmesan. Season with salt and pepper. Allow to cool before folding in the 3 eggs.

Heat the oil in a frying pan on medium heat and cook the mince. Add the onions and garlic to the beef and cook for 3 minutes. Coat the meat in the tomato paste and cook for a further 5 minutes. Next, add the stock and simmer for 10 minutes.

While the meat is simmering you can make the white sauce. So, in a separate pan add the butter and flour and leave to cook for 2 minutes. Slowly add the milk and bring to the boil. Allow to simmer for five minutes.

In the lasagne dish, layer the pasta, meat and white sauce until it is all used up.

Sprinkle the cheese over it and cook in the oven for 60 minutes.
