Broccoli and bacon mini frittata

1 small head broccoli, steamed or boiled for 5 minutes
3 bacon slices, cooked and chopped
8 large eggs
50ml milk
100g shredded cheddar
Salt and pepper
Heat oven to 180°C.
Lightly grease a muffin tray. Divide cooked broccoli and bacon among the 12 muffin cups.
In a large bowl, combine the eggs with milk, salt, and pepper. Stir well and divide evenly among muffin cups. Sprinkle cheddar cheese on top and bake for about 15 to 20 minutes, until there is no runny bit left.
Cool on a wire rack for 2 to 3 minutes then remove from pan. Serve hot or cold, with a side of salad.
