Cauldron soup (Pea and bacon soup)
Fill the kids up with this warming pea and bacon soup before they head out trick or treating!

1 tbsp olive oil

1 onion finely chopped

1 garlic clove, crushed

650g frozen petits pois

750ml vegetable stock

6 rashers streaky bacon

1 tbsp butter, optional

Heat the oil in a saucepan. Tip in the onion and garlic and cook over a low heat until onions have softened.

Stir in two-thirds of the peas followed by the stock.

Bring to the boil and then leave to simmer for 10-12 mins. While you are waiting, grill the bacon until crisp.

Leave to cool for a few mins and then transfer to a food processor and whizz until smooth. 

Pour the soup back in the pan and add the remaining peas. Bring to the boil and simmer on a medium heat until the peas are tender.

Add seasoning to taste and then stir in the butter, if using. Chop the bacon into pieces and sprinkle on top of the soup before serving.
