Chocolate peanut butter cup bites
Little bites of bliss with these chocolate and peanut butter cup devils.
 

195g self-raising flour

½ tsp salt

1 tsp bicarbonate of soda

115g butter, softened

95g granulated sugar

90g peanut butter

100g brown sugar

1 egg, beaten

1 tsp vanilla extract

2 tbsp milk

226g Mini Peanut butter cups

Preheat the oven to 190°C / 375°F / Gas mark 5.

Line 36 muffin hole trays with paper cases

Sift together the flour, salt and bicarbonate of soda and set aside.

In a medium bowl, cream together the butter, sugar, peanut butter and brown sugar until fluffy.

Beat in the egg, vanilla and milk and then add the flour mixture and mix well until a dough forms.

Shape into 36 balls and place each into the prepared muffin holes and bake for about 8 minutes.

Remove from the oven and immediately press a mini peanut butter cup into each ball.

Return to the oven for 3 more minutes of baking until golden brown

Cool in the trays for 1 hour before removing, discard the cases.
