Christmas pasta bake
A tasty way to use your Christmas leftovers

150g butter

150g plain flour

1.2 litres milk

A good pinch of ground nutmeg

2 tbsp chopped fresh mixed herbs (such as chives, flat-leaf parsley & tarragon)

500g packet fresh penne pasta

450g leftover ham and/or turkey, cut into bite-sized pieces

200g frozen peas

1 packet of fresh Italian Mozzarella, sliced

50g grated parmesan cheese

Melt the butter, then whisk in the flour.

Slowly whisk in the milk, then season with salt & pepper & simmer for 10 mins.

Add the nutmeg & herbs.

Preheat the oven to 200°C.

Fold the pasta into the sauce with the peas & ham and/or turkey.

Put a baking dish & scatter over the mozzarella & parmesan. Bake for 15-20 mins until bubbling & golden brown.

Serve straight to the table.
