Easy, budget friendly batch chicken soup
Wholesome chicken soup is easy to make using up leftovers and simple store cupboard ingredients.
 

2 tsp olive oil

1 onion, chopped

2 garlic cloves, crushed

3 leeks, sliced

400g chicken fillets or leftovers

1ltr chicken stock (homemade or stock cube)

3 carrots, chopped

2 potatoes, peeled and chopped

1 tsp mixed herbs, dried

1 tsp black pepper

Fry the onions and garlic in olive oil until they start to soften.

Add the leeks and fry for a further 5 minutes.

Add in the chicken pieces and vegetables with the stock.

Season to taste then add the dried herbs, pepper and the vegetables.

Simmer for 15-20 minutes until the carrots and potatoes are cooked right through.

Blend (optional) and serve warm with a crusty bread.
