A true family favourite we enjoy as a little treat!
200g flour
20g ground almonds
1 egg
½ tsp vanilla extract
125g butter, soft
50g icing sugar
¼ tsp salt
200g ready to eat figs
4 tbsp water
Place the figs in a food processor with the water and blitze until it turns into a puree. Set aside.
Cream the butter and sugar together. Add the egg, the flour, grounds almonds, salt and vanilla extract and mix well until a dough forms. Refrigerate for 30 minutes.
Heat the oven to 165°C. Using a rolling pin, roll out the dough until about 5mm thick, then cut in half lengthwise.
Place the fig mixture in the middle and roll the two sides of the dough over it. Make sure the dough sticks together. Cut the rolls into bite-size biscuits and bake for 20 minutes.
