French toast with caramelised apples
This is perfect as a breakfast dish or a dessert and particularly good served with a dollop of crème fraîche.

3 Braeburn apples, peeled, cored and quartered

150g butter

50g caster sugar

50ml double cream

2 eggs

25g sugar

Pinch of cinnamon

4 slices of brioche

First prepare the apples. Melt 50g of the butter in a pan and heat until it is bubbling. Add the apples and stir until they start to colour. Add the caster sugar and continue to stir until the apples caramelise. If the mixture gets too thick, add a little water to loosen the caramel and cook for another 5 minutes. 

In a bowl, whisk together the cream, eggs, sugar and cinnamon. Heat the rest of the butter in a frying pan. Dip the slices of brioche in the cream and egg mixture until it is well coated, then remove and let any excess drip off.

Fry the soaked brioche in the butter until golden on both sides.

Serve with the caramelised apples.
