Hearty vegetable soup

This hearty winter soup packed with vegetables is ideal for warming up from within.
350g Green Isle Mixed Vegetables
150g potatoes, peeled and cubed
1 tbsp olive oil
700ml vegetable stock
Crème fraîche and fresh herbs, to serve, optional
Fry the Green Isle Mixed Vegetables with the potatoes, in a little oil for a few minutes until everything begins to soften.
Cover with the stock and simmer for 10-15 minutes until the vegetables are tender.
Blend until smooth, then season with salt and pepper.
Serve with a dollop of crème fraîche and some fresh herbs if using and serve.
