2 tbsp vegetable oil
1 onion, chopped
1 red chilli (seeds removed), chopped
1 garlic clove, crushed
400ml light coconut milk
400g tinned red kidney beans, drained
300g long grain rice
400ml vegetable stock
In a large pan, heat the oil and fry the onion and garlic on a low heat to soften
Add the chilli and the rice, stirring for few minutes and then add the coconut milk, kidney beans and vegetable stock.
Bring to the boil, then cover and simmer on low heat for 20 minutes until rice is tender.
