Mexican chicken with lime

2 chicken breasts

2 tbsp olive oil

1 tsp crushed coriander seeds

1 tsp grated lime zest

½ tsp paprika

½ tsp muscovado sugar

1 lime

6 unpeeled garlic cloves

2 fresh red chillies

Combine 2 tbsp olive oil with 1 tsp each of crushed coriander seeds, grated lime zest and 1⁄2 tsp each paprika and light muscovado sugar.

Add the 2 chicken breasts to a baking dish, pour the marinade over and squeeze the lime juice over. Cover with tin foil, place in the fridge and marinade for 30 minutes (longer if you wish).

Push 1-2 lime slices under the skin of each breast and season. Scatter 6 unpeeled garlic cloves and 2 fresh red chillies over the chicken.

Cook the chicken breasts in a baking tray for 30-35 minutes in a preheated oven 170°C/gas 5). Serve with a fresh salad.
