Mushroom toast topping
Love fried mushrooms in the morning? Why not have them served on toast instead. 

1 tbsp butter

½ garlic clove

4 large mushrooms, roughly cut

Salt and pepper, to season

4 slices whole meal bread

Handful parmesan cheese, grated

Basil to garnish

Preheat oven to 180°C/ 375°F/ gas mark 5.

Gently melt the butter in a frying pan on a medium heat. Add the garlic and cook until soft.

Next add the mushrooms and fry for about 4 minutes. Season with salt and pepper.  

Layer the mushrooms on top of the bread and top with the cheese.

Place in the oven for five minutes until the bread is toasted.

Garnish with the basil before serving.
