Mushrooms with wholegrain mustard on toast

This healthy vegetarian breakfast is a must try, its easy and delicious.
4 slice wholemeal bread
6 tbsp light cream cheese
3-4 tsp vegetable oil
400g mixed mushrooms, sliced
8 tbsp skimmed milk
1 ½ tsp wholegrain mustard
Fresh parsley, optional as garnish
In a non-stick pan heat the oil and cook the mushrooms, stirring until soft.
Toast the bread. Add the milk to the mushrooms, cheese and mustard then stir until well coated.
Tip onto the toast, top with parsley if using and serve.
