Noodles with stir-fried chilli vegetables

This recipe for noodles with stir-fried chilli vegetables is so quick and easy and a firm favourite with kids too!
250g pack medium egg noodles
1 tbsp tomato purée
2 tbsp soy sauce
2 tbsp sweet chilli sauce
1 tbsp sunflower oil
Small piece of fresh root ginger, finely grated
100g Green Isle Carrots
100g Green Isle Broccoli
100g Green Isle Wholebeans
Tip in the noodles into a pan of almost boiling water and bring up the boil.
Cook for 4 minutes before draining well.
Mix together the tomato purée, soy and chilli sauce in a bowl with 150ml of water.
Heat the oil in a wok, adding the ginger and Green Isle vegetables and stir-fry for about 3-4 minutes.
Tip in the noodles and sauce and cook for a further 2-3 minutes until everything is piping hot through.
