Pasta with tomato and hidden vegetable sauce

1 tsp olive oil

1 large onion, chopped

2 celery sticks, chopped

2 carrots , chopped

1 leek, chopped

2 peppers , deseeded and chopped

2 x 400g cans chopped tomatoes with garlic

1 tbsp each caster sugar and balsamic vinegar

300g dried pasta shapes

Parmesan, shaved, and rocket, to serve (optional)

In a large saucepan, heat the oil and tip in the onion, celery, carrots and leek and gently cook for 20 minutes until soft. 

Add in the peppers and cook for a further 10 minutes and then tip in the tomatoes, sugar and vinegar.

Leave to simmer for at least 20 minutes. Cook the pasta according to pack instructions. In the meantime, whizz the sauce in a blender until smooth, add seasoning and return to the heat to keep warm until the pasta cooks.

Drain the pasta and mix with the sauce. Serve in bowls with a little parmesan.
