A fast family meal to make using tinned tuna and a cream sauce.

300g pasta of choice

1 tbsp butter

1 tbsp olive oil

1 onion, finely chopped

2 celery sticks, chopped finely

60g butter

3 tbsp plain flour

250ml low fat milk

2x 185g tinned tuna in brine drained

340g tinned sweetcorn, drained

1 chicken stock pot

50g cheddar cheese, grated

Bring a pot of water to the boil, cook the pasta according to the directions then drain and set aside.

In a large frying pan, add the butter and olive oil.

Cook the celery and onion until they become translucent.

Once this is done, empty these vegetables into a bowl.

Using the same pan, heat up the 60g of butter now and add the flour and cook until it starts to brown, stirring gently.

Add in the milk and the stock cube and stir until smooth.

Add the tuna and corn to the sauce and cook for 1-2 minutes, stirring.

Add onion and celery mixture into the sauce along with the drained pasta, cheese and mix until everything is coated.
