Pea soup infused with mint
A crisp classic soup that can be made easily and quickly for a delicious family starter.
 

1 tbsp olive oil

Knob of butter

1 potato, cut into small squares

1lr hot vegetable stock

900g Green Isle Garden Peas

4 tbsp crème fraiche

½ small bunch mint, leaves picked, plus a few extra to serve

Heat the olive oil and butter in a heavy based pan.

When the butter is bubbling add the potato.

Gently fry without colouring for about 5 minutes.

Stir in the stock, bring to the boil and simmer for 10 minutes or until the potato is tender.

Stir in the Green Isle Garden Peas, bring to the boil again, and cook for a couple of minutes until they are just done.

Remove the pan from the heat, add crème freche and the mint leaves and blitz in a blender or food processor until smooth.

Heat the soup through then scatter with mint and serve directly.
