Peanut butter cup cookies
Easy peanut buttercup cookies are absolutely amazing and quick to make.

30g self raising flour

¾ tsp bicarbonate of soda

½ tsp salt

115g unsalted butter, softened

135g smooth peanut butter

95g granulated sugar

100g brown sugar

1 egg

1 tsp vanilla extract

226g Reese's Mini Peanut Butter Cups

16 Reese's Peanut Butter Cups

Preheat the oven to 180°C / 350°F / Gas mark 4.

Line a baking tray with greaseproof paper and set aside.

In a medium bowl, whisk together the flour, bicarbonate of soda, and salt.

Using a food processor or an electric mixer, cream the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla.

Gradually add the dry ingredients, mixing until a dough forms.

Stir in mini-peanut butter cups by hand.

Divide the dough into 16 equal balls and flatten slightly with your hand, forming a thick disc.

Place 5 or 6 discs on the prepared baking tray evenly spaced.

Bake for 8 minutes, and remove from the oven.

Immediately place a Reese's cup in the centre of each cookie, and return to the oven to bake for 3 minutes more.

Remove from the oven, and cool for 5-10 minutes before transferring to a wire rack to cool completely.

Bake the remaining dough discs.
