Pepper and walnut dip

This walnut dip is a great tasting dip - perfect served with tortilla chips.
1 tsp each ground cumin
2 tbsp olive oil
1 garlic clove, minced
50g walnuts, halved
200g roasted red peppers from a jar, drained
1 tbsp tomato purée
1 tsp chilli flakes
2 tbsp lemon juice
Salt and pepper
Fresh parsley to garnish
Tortilla chips to serve
In a pan, heat the ground cumin in the olive oil for about a minute. Add the garlic and cook for a further minute.
Combine half of the walnuts and the red peppers in a food processor.
Add the tomato puree, chilli and the lemon. Season with salt and pepper.
Pour in the oil, cumin and garlic mixture and process for another minute. You don’t want it to get too smooth.
Spoon into a bowl and top with the rest of the walnuts and parsley.
Serve with tortilla chips.
