Quick paella

Quick paella
Our quick one pot paella studded with mussels and prawns. 
 

1 tbsp olive oil

1 onion, chopped

1 red pepper, chopped

2 cloves garlic, minced

400g rice, cooked

300ml chicken stock

½ tsp dried thyme

1 large pinch saffron, or tumeric optional

300g cooked tiger prawns

100g frozen peas

100g mussels (from fish monger)

100g clams (from fish monger

4 lemon wedges (optional)

Heat the oil in a large skillet over medium heat.

Add the onion, pepper and garlic and cook, stirring occasionally, until the vegetables are softened.

Add the rice, stock, thyme, salt, pepper and saffron or tumeric (if using) and bring to a boil over medium heat.

Cover and cook for 5 minutes.

Stir in prawns and peas.

Place the mussels and clams on top of the rice in an even layer.

Cover and continue cooking until the mussels and clams have opened and the rice is heated through.

Remove from the heat and rest covered, until most of the liquid is absorbed, about 5 minutes.

Serve with lemon wedges, if desired.
