Red pesto with spaghetti

Really easy and incredibly tasty
2 cloves garlic, peeled
40g pine nuts
280g sundried tomatoes in oil, drained
1 red chilli, deseeded and chopped
1 bunch basil
50g Parmesan cheese, grated
120ml extra virgin olive oil
500g spaghetti
Extra Parmesan to serve
Put a large pot of water onto boil.
Place the garlic, pine nuts, sundried tomatoes, chilli and basil in the mini chopper bowl. Process till smooth but with some texture left.
Add the Parmesan cheese and olive oil and process again till well mixed.
When the water is boiling, add the spaghetti and cook according to the instructions on the packet.
When the spaghetti is done, drain and place back in the saucepan with the red pesto. Stir well and transfer to serving bowls.
Serve immediately with the extra Parmesan cheese.
