Salsa soup

This immune booster involves no cooking and is simply delicious.
5 ripe tomatoes, chopped into large chunks
1 small red onion, chopped
1 garlic clove, chopped
½ tsp sugar
Juice 1 lime
Handful coriander, stalks and leaves, chopped
Olive oil, to drizzle
Parsley, to serve
Cucumber, a few small pieces chopped as garnish (optional)
Tip all the ingredients into a blender or food processor with a generous grinding of pepper and salt, if you like.
Pulse until you get a chunky, frothy soup.
Serve in small glasses topped with chopped parsley and cucumber bites.
