Vegetable quesadillas

This quick vegetable based quesadilla is quick to make during the week.
2 tomatoes, halved, seeds scooped out, then chopped
½ x 198 tinned sweet corn, drained
3 spring onions, chopped
1 red chilli, sliced (deseeded if you like it milder)
1 tsp olive oil
100g cheddar, grated
2 large wraps
Soured cream and guacamole to serve, (optional)
Coriander, to serve (optional)
Mix the tomatoes, sweet corn, the spring onions and the red chilli with some seasoning and set aside.
Stir through the cheese, then divide between the wraps, fold them over and cut in half.
Cook over a heated griddle pan until browned and the cheese has melted.
Serve with tomato salsa, soured cream and guacamole, if you like along with a few coriander leaves.
