Chilli con carne

2 large onions

700g lean stewing beef, remove the fat and cut into cubes

3-4 cloves of garlic

800g canned tomatoes

2 green/red peppers

3 green or red chillies (remove the seeds for a mild version)

2 tsp ground cumin

400g tinned red kidney beans

1 tsp brown sugar

To serve

2 tbsp coriander leaves

4 tbsp cheddar cheese, grated

Heat the olive oil in a casserole dish and fry the meat for about 5-6 minutes until lightly browned. Add the onion and garlic and stir for a minute before adding the tinned tomatoes, peppers, chopped chillies and a pinch of salt and pepper.

Place a lid on the casserole dish and simmer for about an hour, until the meat is tender and the liquid has formed a sauce of thick consistency.

Add the cumin, kidney beans and the brown sugar. Simmer for 10 minutes and serve with rice and grated cheese. Garnish with the coriander leaves.
