Butternut squash and apple soup
A truly healthy option for a mid-week pick me up, this soup is a joy to make and eat.
 

1 butternut squash, peeled and cut into chunks

3-4 potatoes peeled and cut into chunks

1 large green apple, peeled and chopped

1 onion, chopped

475ml vegetable stock

1 tbsp butter

¼ tsp nutmeg

¼ tsp ginger

Pinch of salt and pepper to taste

Combine the squash, potatoes, onion, stock and apples in the slow cooker.

Cover and cook on low for 6 hours.

Stir in spices, butter, salt and pepper in the last 5 minutes then puree in a blender and serve.
