Chicken and noodles soup

This chicken noodle soup is packed full of nutritious vegetables and is perfect if you are feeling a little under the weather.
3 large chicken fillets
2 onions, quartered
3 cloves garlic, smashed
3 peppercorns
2 large carrots
10 sprigs of lemon thyme
4 parsley stalks
4 small mushrooms, sliced
3 tsp salt
200g spaghetti noodles, broken in half
Gently cook the chicken in a pot of boiling water for 10 minutes, make sure the chicken is covered in water.
Add in the onions, garlic, peppercorns, lemon thyme, parsley and mushrooms. Lower the heat and allow to simmer for 20 minutes. Remove the chicken and set aside.
Add a pinch of salt to the pot and bring the stock back to the boil before allowing it to simmer for 10 minutes. Turn off the heat and leave to sit for 5 minutes.
Strain the stock into a large bowl and set aside.
Pour the strained stock back into the pot and bring it to the boil. Add the noodles, carrots and another pinch of salt.
Boil until the noodles are soft. Return the chicken to the pot and allow to sit for 5 minutes before serving.
