Chicken noodle soup

The perfect soup when your feeling under the weather
900ml chicken stock
1 boneless, skinless chicken breast
1tsp grated fresh root ginger
1 garlic clove, chopped finely
50g rice or wheat noodles
2 tbsp sweetcorn, tinned or frozen
3-4 mushrooms, finely sliced
2 spring onions, chopped thinly
2 tsp soy sauce
Mint leaves, chopped red chilli (optional) to serve
Pour the chicken stock into a saucepan and add the chicken, garlic and ginger. Bring to the boil, and then reduce the heat. Cover the saucepan partially and simmer on a low heat for 20 minutes under the chicken is tender. Remove the chicken and cut into thin strips.
Return the chicken to the stock; add the noodles, corn, mushrooms, spring onions and the soy sauce. Simmer for 3-4 minutes until the noodles are tender. Garnish with mint leaves and chopped chilli.
