Coconut and strawberry ice cream sandwich

The ice cream sandwich gets a tasty upgrade!
1 HB Hazelbrook Farm Vanilla Ice Cream Block
12 wafers
4 tsp strawberry jam
3 tbsp desiccated coconut
Cut a 1/6 slice of ice cream off the HB Hazelbrook Farm Vanilla Ice Cream block and place between two wafers.
Brush sides with strawberry jam and dip in desiccated coconut.
One block cut into 1/6 slices will make six well proportioned ice cream sandwiches.
Serve immediately.
