Cucumber and mint sandwiches
Finger sandwiches are an essential element of a traditional afternoon tea – delicate little savoury morsels to start the meal. Serve them as they are still served to Queen Elizabeth today with the crusts removed.
 

4 thin slices peeled cucumber

2 mint leaves, finely chopped

1 tsp white wine vinegar

1 tsp olive oil

softened butter

1 slice brown bread

1 slice white bread

Marinate the cucumber in a bowl with the mint, vinegar and olive oil for 10 minutes.

Spread each slice of bread with butter, then lay the slices of cucumber on top of one half.

Put the other slice of bread on top and press to secure.

Slice off the crusts, cut the sandwich into three fingers and serve.
