Pork pasta bake
A tasty bake with pork and pasta with tons of vegetables and a tomato sauce.
 

1 tsp vegetable oil

2 onions (medium), chopped

2 garlic cloves, chopped

250g minced pork

2 x 400g tinned chopped tomatoes

1 tbsp tomato puree

1 tsp mixed herbs

1 tbsp Worcestershire sauce

1 tsp sugar (optional)

½ courgette (skin on), chopped

4 celery stalks, chopped

250g macaroni or pasta shape of choice

For the cheese sauce

40g flour

40g butter

400ml full fat milk

100g mature cheddar cheese, grated

½ tsp Dijon mustard

Fry the onions and garlic the vegetable oil until soft.

Add the mince and brown until cooked through on a low heat.

Add the tinned tomatoes, puree, herbs, Worcestershire sauce, sugar if using, pepper and chopped vegetables.

Stir and cook on a low heat for 20 minutes until the vegetable are just tender.

Melt the butter, stir in the flour and cook on a low heat for 2 minutes.

Gradually add the milk and stir as it thickens.

Add the grated cheese handful by handful to taste, along with the mustard and mix.

Preheat the oven to 190°C / 375°F / Gas mark 5.

Meanwhile, cook the macaroni for 5 minutes in boiling water only then drain and set aside.

Pour the mince mix into a baking dish, stir in the macaroni then top with the cheese sauce and grated cheese if desired.

Bake in the oven for 20 minutes or until the cheese is golden and bubbling and the pasta is soft.
