Simple gnocchi spinach and cannellini beans

This one-skillet supper, combined lovely Italian ingredients and flavours for a satisfying easy dish.
1 ½ tbsp olive oil
500g fresh gnocchi
1 medium onion, thinly sliced
4 garlic cloves, finely chopped
115ml water
400g spinach
400g tinned chopped tomatoes
400g tinned cannellini beans, rinsed
100g green beans, tipped and tailed then halved
100g mozzarella cheese, grated
50g Parmesan cheese, grated
Fresh basil, garnish
Heat 1 tablespoon of oil in a large non-stick pan over medium heat.
Add the gnocchi and cook, stirring often, until plump and starting to brown, about 5 minutes. Transfer to a serving bowl.
Add the remaining oil and the onion to the pan and cook, stirring, over medium heat, for 2 minutes.
Add the garlic and water.
Cover and cook until the onion is soft, 4 to 6 minutes.
Toss in the spinach and cook, stirring, until starting to wilt, 1 to 2 minutes.
Stir in the chopped tomatoes with their juices, beans, green beans and a generous grind of black pepper.
Bring to a simmer.
Stir in the gnocchi and sprinkle with the mozzarella and Parmesan.
Cover and cook until the cheese is melted, the beans are tender and the sauce is bubbling then serve witrh a scattering of fresh basil.
