Spicy herb infused nuts
Nuts make the perfect snack and these give an ultimate make over with herbs and heat.

100g blanched whole mixed nuts

1 tsp chopped thyme

1 tsp chopped rosemary

2 tbsp olive oil

2 tbsp honey

1 tsp red chilli flakes

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a baking tray with greaseproof paper and set aside.

In a bowl, combine all the ingredients with a little salt and pepper, then toss until well coated.

Spread the nut mixture out in a single layer on the baking tray and bake until golden (about 5-7 minutes), then remove from the oven.

Transfer the nuts to a sheet of non-stick baking paper and leave to cool.
