Red pepper flakes and cheddar scones

These cheesy scones are deliciously spicy: not for the faint-hearted!

450g self-raising flour

375ml buttermilk

60g butter, chilled

100g grated cheddar

2 tsp red pepper flakes

1 tsp sugar

Salt and pepper

Preheat oven to 220°C/425°F/Gas 7. Lightly brush a baking tray with butter.
In a large bowl, combine the flour, sugar and a pinch of salt. Using your fingertips, rub the butter into the flour. Add the cheddar and red pepper flakes.
Add the buttermilk and mix until just combined. Use your hands to bring the dough together in the bowl.
Turn dough onto a lightly floured surface. Knead gently and flatten until about 2cm thick. Use a round cookie cutter to cut about 12 to 15 discs from the dough. Place on the prepared tray, and sprinkle with more cheddar cheese if desired. Bake for 12 minutes or until scones are golden. Set aside to cool slightly. Serve with butter and red pepper relish.
