Zesty Chicken Courgetti
2 chicken breasts
A bunch of fresh coriander
1 tsp cumin
1/2 tsp cayenne pepper
1 tbsp roasted peanuts, roughly chopped
1 tbsp olive oil
Salt and pepper
Dice the chicken and cook in a large pan over medium to high heat, with olive oil. Season with salt, pepper, cayenne pepper and cumin. When the chicken is almost cooked, squeeze half a lime over it and finish cooking.
Meanwhile, spiralize the courgettes. When the chicken is cooked, add the courgettes to the pan for about 1 minute, just to warm them up. Toss the courgettes with the chicken. Add the coriander. Serve topped with the peanuts and a wedge of lime.
Do not overcook the courgettes as you want them to remain firm.
