Banana, blueberry and chia seed muffins

Really tasty muffin, great for breakfast on the go.

2 eggs

75g brown sugar

250ml milk

3 tbsp vegetable oil

1 banana, mashed

125g plain flour

75g wholemeal flour

200g rolled oats

1 tsp cinnamon

3 tbsp chia seeds

2 tsp baking powder

1 tsp salt

125g blueberries

Preheat oven to 200°C/400°F/Gas 6.
Line a 12 hole muffin tray with paper cases.
Whisk the eggs, brown sugar, milk and vegetable oil together.
Add a chopped banana to the mix.
In another bowl mix the plain flour, wholemeal flour, rolled oats, chia seeds, baking powder and cinnamon together.
Add 125g of blueberries to the mix.
Add the flour mix into the egg mix and combine.
Spoon the batter into the prepared cases.
Bake in the preheated oven for 25 minutes.
Leave to cool on a baking rack, serve.
