Chocolate Cupcakes

Delicious chocolate cupcakes which are perfect for childrens parties.

200g butter

200g dark chocolate

200g light muscovado sugar

100ml hot water

2 eggs, beaten

250g self-raising flour

Icing

100g dark chocolate

100g milk chocolate

100m double cream

50g icing sugar

Sprinkles and mini marshmallows to decorate

Preheat oven to 160°C/320°F/Gas 3.
Line a 12 hole muffin tray.
Melt the butter, dark chocolate, muscovado sugar and hot water together in a saucepan.
Stir until smooth, then remove from the heat.
Add the beaten eggs into the melted mix.
Place the flour into a large bowl, then pour in the melted mix and beat until smooth.
Pour the mixture into the prepared cases.
Bake for about 20 minutes. 
Leave to cool on a wire rack.
For the icing, melt the dark chocolate and milk chocolate together.
Once melted add the double cream and sift in the icing sugar.
Leave to cool in the fridge until spreadable.
Spread the cupcakes with the icing.
Top with mini marshmallows and sprinkles, serve.
