Sweet shop birthday cake

Impressive childrens birthday cake which is easy to prepare.

225g caster sugar

225g butter

4 eggs

225g self-raising flour

1 tsp baking powder

1 tbsp milk

Buttercream Icing

200g butter

400g icing sugar

1 tsp vanilla extract

5 tbsp strawberry jam, for the filling

400g sweets of your choice

Candles, to light

Preheat oven to 180°C/350°F/Gas 4.
Grease and line 2 x 20cm round sandwich tins.
Cream the sugar and butter together.
Add the eggs one at a time, beating between each addition.
Sift in self-raising flour and baking powder and mix gently.
Add milk and combine.
Scrape mix into the prepared sandwich tins and bake for 25 minutes.
Remove from the oven and leave to cool.
To make the buttercream icing, beat the butter, icing sugar and vanilla extract together until smooth.
Once the cakes are cool, spread one cake with jam, spread the other with buttercream icing.
Sandwich them together, then spread the top layer with more buttercream icing.
Arrange the sweets over the top of the cake.
Add the candles, light and serve.
