Ultra light panna cotta
A light and refreshing dessert
3 tbsp sweetener
2 tsp vanilla extract
350g fat free yoghurt
1 sachet gelatine
1 egg white
1 kiwi, diced
1/2 mango, diced
Prepare the gelatine according to indications on the package.
Whisk the egg whites until they form soft peaks.
Whisk the quark, the sweetener, vanilla extract, yogurt and gelatine until the mixture is smooth. Fold in the egg whites and transfer into six ramekins. Refrigerate overnight.
Dip the ramekins in hot water for a few seconds and tip out onto serving plates.
Top with diced fresh fruits and serve immediately.
